Hi, Daisies!
Guess what, tomorrow is International Nacho Day, so what better way to celebrate than with a recipe you can make right at home! I have said it before, Guy Fieri is one of my favorite chefs, so of course, I am going to post another one of his recipes (I know there will be many more to come). If you haven't tried his trash can nachos, you are missing out! I first had them when I was going to a Boston Bruins Game and went to eat at Guy Fieri's Tequila Cocina.
Now with any nachos, of course, you can substitute certain things if you don't like spicy, or add some in if you love spicy. But this recipe is his and does require a lot of ingredients. This recipe is long but is pretty simple to make, just don't get overwhelmed by this recipe's length.
Also, If you have a favorite cheese sauce, that's in a can you can always use that instead of making your own.
Ingredients
Pico De Gallo
2 small chopped tomatoes
1/2 cup diced red onion
1 jalapeno
1/4 cup freshly chopped cilantro
1 tbsp lime juice
Kosher salt and pepper
Beef
1 tbsp extra virgin olive oil
1 lb ground beef
Kosher salt and pepper
3 cloves minced garlic
1/2 tsp ground cumin
1/2 tsp ground paprika
1/2 tsp Cholula original hot sauce
Cheese sauce
2 tbsp butter
2 tbsp all-purpose flour
1/2 tsp hot sauce
salt and pepper
2 cups whole milk
2 cups shredded cheddar cheese
Assembly
2 cup shredded cheddar cheese
1 container sour cream
tortilla chips
110 oz tin can
Directions
Pico De Gallo
Mix all ingredients together in a bowl
Beef
In a large skillet heat up the olive oil
Add the beef into the skillet with salt and pepper
Drain the oil and add spices
Heat for 1 minute, remove and set aside
Cheese Sauce
Melt butter in medium pot
Add flour and stir for 1 minute
Slowly whisk in the milk and contunue stirring until thick, ~ about 6 minuets
Remove from heat and add hot sauce, cheese, salt and pepper
Assembly
In bottomof 110-oz tin can spread some cheese sauce, then tortilla chips, then cheese sauce, then beef, some beans, some sour cream, pico de gallo, and then some hot sauce.
Repeat this process until the can is full
Place plate on the top of tin can, flip it over and slowly remove the can
Garnish with sourcream, cheese sauce, pico de gallo and hot sauce
